Henning's Corn Dip
Ingredients:
2 Tbsp. Olive Oil
2 cloves Garlic, Minced
1 large White Onion, chopped (approximately 1 1/2 cups)
1 Pepper, small diced (assorted color, approximately 3/4 cup)
1 bunch Green Onions, chopped
5 1/2 cups Fresh or Frozen Sweet Corn, thawed and drained
3 Tbsp. Fresh Lime Juice
1 Tbsp. Sugar
1 cup Real Mayo
8 oz. Cream Cheese
12 oz. Henning’s Cheese, shredded (Mango Fire Cheddar, Louisiana Lagniappe Cheddar, Pico de Queso Cheddar, Chipotle Cheddar, Hatch Chile Cheddar)
Instructions:
In a large sauté pan over medium high heat, heat olive oil and sauté garlic, white onion, and colored peppers. If using fresh sweet corn, sauté with onion, garlic and green pepper. Sauté for 2 minutes and add green onion and lime juice. Stir in mayo, cream cheese and shredded cheese. Heat till cheese is melted. Serve warm with tortilla chips.
