How we make our cheese so you can taste the difference

We place an emphasis on quality over quantity in the belief that you can only make great cheese from great milk. That’s why we source our milk exclusively from small local family dairy farms, within a 30-mile radius of our factory. Situated in eastern Wisconsin, the Niagara Escarpment creates a mineral-rich landscape with unique compositions in the grasses and crops which gives our milk and cheeses their unique flavor.

But great milk is just the starting point. Once the milk reaches our factory, that’s where the true artisanal magic happens…
