Creamy Mac & Cheese
1/2 stick Butter, melted
1/4 cup Flour
3 cups Whole Milk
1 tsp Mustard Powder
1 1/2 cup Henning’s Aged Cheddar or Henning’s Sharp Cheddar, shredded
1 cup Henning’s Colby, shredded
16 ounces Pasta, shape of choice
Optional: 1/3 cup Sweet Green Peas, thawed
Bring salted water to a boil in a large pot. Once it comes to a boil as you’re making the sauce, add pasta and cook according to package directions.
While water is coming to a boil, melt butter in a medium saucepan over medium heat. Add flour & mustard powder to make a roux.
Whisk in 1 cup milk until combined with roux. Add remaining milk, whisking vigorously to ensure no lumps. Sauce will thicken up.
Turn heat to low, add cheeses; whisk until cheeses melt and sauce is smooth. Add optional green peas and season with salt and pepper to taste.
Pour sauce over pasta, stir until pasta is completely coated in sauce.
