Chicken Pico Quesadillas

2 Servings
2 Tbsp. Butter
6 oz. Cooked Chicken Breast
4 Homestyle Flour Tortillas
1 1/2 cups (6 oz.) Henning’s Shredded Cheese

Pico de Queso Cheddar, Chipotle Cheddar, Mild Cheddar, Medium CheddarColby, Colby Jack, Pepper Jack, Habanero Jack, Monterey Jack, Mango Fire Cheddar

Fresh Pico
2 Roma Tomatoes, deseeded & diced
¼ Red Onion, small dice
1 Avocado, diced
½ clove Garlic, chopped
1 Lime, juiced
2 Cilantro Sprig, roughly chopped
Salt & Pepper to taste

Cooking Directions

Prepare the Pico, by combining all ingredients.
Butter one side of each tortilla. Place tortilla, butter side down onto a griddle. Generously sprinkle with cheese, chicken, and Pico. Place tortilla, butter side up and wait until bottom tortilla begins to brown. Carefully flip tortilla, toasting the other side.
Remove from heat, cut into triangles, and serve with extra Pico.
