Aged Cheddar Thumbprint Cookies
Servings: 18 Cookies
Ingredients:
1/2 cup (1 stick) butter, softened
1/4 cup packed brown sugar
1 large egg yolk
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1/4 teaspoon salt
8 ounces Henning’s Aged Cheddar cheese, shredded (2 cups)
1/4 cup finely chopped walnuts, optional
2/3 cup fruit jam of choice
Cooking Directions:
Heat oven to 350°F.
Cream butter and brown sugar in a large bowl until light and fluffy. Add egg yolk and vanilla; beat until mixture is blended. Combine flour and salt in another bowl; gradually add to butter mixture just until moistened. Stir in cheddar.
Shape dough into 1-inch balls. Roll in walnuts if desired. Place 2 inches apart on parchment-lined baking sheets. Press an indention into the center of each with your thumb or handle of a spoon. Fill each with 1/2 teaspoon jam.
Bake for 11 -15 minutes or until edges are lightly browned. Remove to a wire rack to cool completely.
