Aged Cheddar Apple Nut Bread

Servings: 1 Loaf
1/2 cup (1 stick) butter, softened
2/3 cup sugar
2 large eggs
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups peeled, cored and shredded apples
1 cup walnut halves, chopped
2 ounces Henning’s Aged Cheddar or Henning’s Apple Cheddar shredded (1/2 cup)

Cooking Directions:
Heat oven to 350°F.
Cream butter and sugar in a large bowl until light and fluffy. Add eggs, one at a time, beating each until blended. Combine the flour, baking powder, baking soda and salt in another bowl; gradually add to butter mixture. Fold in apples, walnuts and cheddar. (Batter will be stiff.)
Transfer to a greased 9 x 5-inch loaf pan. Bake for 55-60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.
